Quick Chicken Wine Casserole

Quick and Easy Chicken Wine Casserole is a recipe I've had forever.  It was one that my college roommates and I cooked for our boyfriends when we wanted to impress them with our "gourmet cooking skills."

I have served it at many small dinner parties too, and everyone always thinks you spent hours in the kitchen to make it. Surprise, you can get everything in the oven in 15 minutes or less and just wait till it's cooked 2 and a half hours later.

In the meantime, set the table, chill the rest of the Wine, and go get ready. When you are done, so is the Quick Chicken Wine Casserole and the rest of the Wine. How easy can you get?

Oh, did I mention it's awesomely delicious? It is!

Ingredients

4-6 Pieces of Chicken
2 cans Cream of Mushroom Soup
1 can Cream of Celery Soup
1/2 cup Sauterne
(or other White Wine)
2 medium Onions
10 Carrots
Thyme, Salt, Pepper, Basil

Optional: Add 1 can of Peas, or a box of Frozen Peas
Add Canned or Fresh Mushrooms


Directions for Quick Chicken Wine Casserole
~Heat oven to 350 degrees~ 

Use a 2 quart or larger dish 

Place Chicken pieces in a Casserole dish and season with the Spices. 

Pour Soups on top. 

Cut up Onions and Carrots and Peas(optional) and add. 

Pour the Wine over all. 

Bake for 2 and 1/2 hours. Enjoy!

Serve with Rice or any kind of Noodles and a Salad for a quick and tasty Gourmet meal for 2 or 3 people. 


*You can add more Chicken and I often use 8 pieces, but if you use more than 8 pieces, add more Soup. It cooks down to a thick sauce.

Chicken Artichoke Casserole is one of my staples for entertaining. It's another one of my Quick Gourmet series of recipes dedicated to those of us who love good food but don't want to spend too much time in the kitchen. 

I used to spend lots of time there myself, but now I want to enjoy other things, so I depend on recipes like this one.

If you are looking for a fast easy delicious and not too messy to prepare Gourmet main dish, this one fills the bill. 

Just cook the chicken ahead of time, or buy it already cooked to make it even faster. Then you can have this Chicken Artichoke Casserole all done in an hour.

I like to serve it with rice or wild rice and a crisp green salad with cornbread or sourdough bread.

Ingredients

2 Cans Cream of Chicken Soup
1 Can Cream of Celery Soup
1 Cup Mayonnaise
1/3 Cup Lemon Juice
1/2 Tsp. Lemon Pepper
8 oz. Cheddar Cheese
6-8 Chicken Breasts, cooked and sliced
2 Cans Artichoke Hearts, 
drained and sliced
4 Tbs. Butter
1 Cup Bread Crumbs
Garlic Powder, Salt, and Pepper


Directions for Chicken Artichoke Casserole
~ First Heat Oven to 375 degrees F~ 

Grease Casserole with Oil or Butter.

In a large saucepan, combine Soups, Mayonnaise, Lemon Juice, Lemon Pepper and Cheese. Heat on medium till Cheese melts.

*Note: I really don't like Cream of Celery Soup, so I use Cream of Mushroom Soup instead

In 3 qt. or larger Casserole Dish, layer half the Chicken, half the Artichokes, and cover with half the Sauce, then repeat.

Melt Butter in saucepan and saute Bread Crumbs, Garlic, Salt and Pepper. Top the Casserole with this Crumb mixture.

Bake 30 minutes at 375 F

Serves 6-8

Chicken Zucchini Bake

Chicken Zucchini Bake, Chicken Zucchini Casserole, which one is it? Well I've seen it written both ways with the identical ingredients and directions, so I gave up trying to decide and will leave it to you. 

Either way, it's fast, easy, delicious, and budget friendly.

I've even taken it to a Pot Luck dinner and gotten rave reviews, so I guess it's good enough for company too. 

Serve with some Pasta or Rice on the side, add a crisp Green Salad and some Corn Bread for an interesting menu that will serve 6. This is a super easy Chicken recipe!

Ingredients
2 1/2 cups Zucchini, thinly sliced
2 cups Chicken Breast chunks
1 can Cream of Chicken Soup
2 tbs Milk
1/8 tsp Nutmeg
1 cup of Bisquik or Baking Mix
1/4 cup grated Parmesan Cheese
1 Egg
1 tsp Parsley Flakes
1/4 cup Butter

Optional:1 finely chopped Tomato


Directions for Chicken Zucchini Bake
~First Heat Oven to 350 Degrees~

Arrange sliced Zucchini in 8 x 8 x 2 pan or baking dish.

Top with chopped Chicken and chopped Tomato if desired.

Mix Soup, Milk and Nutmeg.

Spread over Chicken.

Mix Baking Mix, Parmesan Cheese and Egg until crumbly.

Sprinkle over Soup mixture.

Sprinkle with Parsley flakes.

Drizzle with Butter.

Bake until Golden Brown (25-30 min).

Serves 4.

Easy Gourmet Chicken Rice Casserole

Easy Chicken Rice Casserole

Easy Chicken Rice Casserole is one of my all time favorite recipes because it is not only quick and easy, and healthy, and gourmet, and it uses only one dish, but it also has endless variations!

I have listed the basic Easy Chicken Rice Casserole recipe here, plus 6 more variations, but really you could easily add your own variations by altering the spices. The thing I like best is that it is all in one dish, so easy cleanup!

Ingredients

1/2 cup Butter (1 stick)
1 cup White or Brown Rice
1 envelope Dry Onion Soup Mix
6-8 Chicken pieces, your choice
Spices, your choice



Directions for Chicken Rice Casserole
~ First, heat oven to 375 degrees Farenheit~

Melt Butter in large baking pan. I use a 9 inch by 13 inch.

Add Rice and Soup Mix evenly around the bottom of the pan. No need to mix.

Place Chicken parts on top of the Rice mixture. It is okay if they touch, but you don't want them squished in the pan.


Salt and Pepper and add any other spices of your choosing. See lots of variations below.

Pour 2 and 1/2 cups of Water over the whole thing.

Cover with foil or lid and bake for 1 hour.

Take lid or foil off and cook 1/2 hour more. You can also add Cheese to the top and let it melt, for the last 5 minutes.

Enjoy!


Endless Variations
Quick and Easy Chicken Rice Casserole


Make it French:
Add Basil, Thyme, Garlic Powder, 1/2 cup of chopped Onion, or add Herbs do Provence seasoning to taste. Add Parsley to the top before serving.

Make it Indian:
Add Turmeric, Cinnamon, Saffron, chopped Onion, or mild Curry Powder.

Make it Thai:
Add medium hot to hot Curry Powder and chopped Onion, and some Raisins.

Make it Tex-Mex:
Add chopped Green Chilis, chopped Onion, chopped Tomatoes, and Hot Sauce. Add shredded Cheddar Cheese on top.

Make it Italian:
Add chopped Onion, chopped Garlic, Basil, Thyme, Parsley, Italian Seasoning. Melt Mozzerella on top for the last 5 minutes.

Make it Southern:
Leave it plain. Make 2 cups spicy hot Gravy using Chicken Boullion and Milk as the liquid for your gravy. A Sausage Gravy also works well. Instead of Cheese, pour this all over the whole Casserole for the last 5 minutes...or just serve on the side.

Bonus: You can make it a different way for all your Potluck Parties and everyone will think you are a genius in the kitchen. Only you will know your secret!

Quick Chicken Enchiladas

Chicken Enchiladas the Quick and Easy Way

Quick Chicken Enchiladas

Super Easy, Super Quick, Super Delicious, and Gourmet too! Chicken Enchiladas in half an hour! This is another in my series of Quick Gourmet recipes for busy people.

As an alternative to the Tomato-Chili version of Enchiladas, this is a different flavor combination: Cheese-White Sauce. It is a staple at our house. We like it spicy hot, so we add Chili Powder to the Sauce.

If you are vegetarian, it is delicious using just Mushroom soup instead of Chicken soup...on Meatless Mondays that is what we do.

Easy, delicious, fast, inexpensive, what more can I say? Enjoy your Quick Chicken Enchiladas!

Ingredients

2 cans of Cream of Chicken Soup
or 2 cans of Cream of Mushroom
or 1 can of each
2 cups of Shredded Monterey Jack Cheese
8 oz. Sour Cream
Half cup finely chopped Onion
Chopped Chicken, optional
1 can chopped Green Chilies
Salt, Pepper, Cumin
10-12 Tortillas



Directions for Quick Chicken Enchiladas

Mix all ingredients except Tortillas in a bowl. Add Salt, Pepper and a little Cumin to taste.

Spread 2-3 Tablespoons of this filling in each Tortilla. 


Roll up and place in a flat casserole dish. 


Reserve a little of the filling to drizzle over the top, and sprinkle with  some shredded Cheese also.


Bake at 350 degrees for 20 minutes or until hot and bubbly.


Enjoy!


Optional: Turn it into a Casserole.

Instead of Tortillas, prepare 6 oz. Noodles, drain and mix with Sauce. Bake. Wonderful!

Also, extra Chicken is not necessary!


What Goes With Chicken Enchiladas?
(Besides Margaritas)

Serve with Rice and Beans, and a fresh Salad, or instead, add some Guacamole and Chips. Or any combination of those.

For Dessert, serve something cold, as a contrast...like Ice Cream or Sherbet... drizzled with Fruit Sauce or even a few fresh Strawberries or Kiwi slices...and while you're thinking of something refreshing to counterbalance the hotness of the Enchiladas, how about a Margarita? Even the non-alcoholic ones taste great, or so I am told!

This basic Chicken Curry is extremely simple, and yet quite elegant. I have served it at dinner parties many times and received lots of compliments.

Just having the word "Curry" in the title of a recipe somehow makes it seem exotic, doesn't it?

But making a Curry dish is simple. It's just a matter of adding some wonderful Curry Powder in a sauce and serving with some Rice. I like to add a few Raisins into the Rice and add Chutney on the side, like they do in India and Thailand and other Asian countries I have visited. I have included some sources of Curry Powder and Chutney too, so no need to even go shopping!

This is one of my Quick Gourmet recipes!

Ingredients
6-8 large pieces of Chicken
2 tbs. Butter
3 tsp. Curry Powder
1 Apple, chopped fine
1 Onion, chopped fine
1 can Cream of Mushroom Soup
1 cup real Cream or Half and Half
Salt, Pepper, Paprika
Optional: Raisins, Chutney, Rice



Directions for Easy Chicken Curry

Melt the Butter in a medium saucepan and saute the Onion, Apple, and Curry Powder until the Onion is transparent. Then add the Soup and the Cream. Don't cheat and use Milk; the Cream makes a big difference.

Now butter a baking pan and arrange the Chicken in it, then Salt and Paprika the Chicken.

Pour the Sauce over the chicken. Bake uncovered at 350 F degrees for one and a half hours.

Great served with Raisin Rice and Chutney on the side.

You may wonder about a recipe called Chicken Surprise. Well I made up the recipe, and the name, for this little concoction that all children seem to love. Here is the story of Chicken Surprise.

When my kids were very small they loved mashed potatoes. They loved them so much that while eating they would put the potatoes all over their other food.

One day I came home with 2 little hungry toddlers and looked in the refrigerator for inspiration. The only thing staring back at me was a bowl of left over mashed potatoes. Next I tried the pantry and all I had was soup and canned fruit. Obviously shopping was overdue...

A bell went off in my brain and I heated up the potatoes, heated up some cream of chicken soup, piled the potatoes on their plates and used the cream of chicken soup like a gravy and poured it all over them. Since you couldn't see the potatoes, I called it "Chicken Surprise."

They loved it, mostly for the name, I think.

That worked so well I put the fruit over some frozen orange juice and called it "Fruit Surprise."

After that we had lots of surprise meals, and I learned that kids will eat anything with the word "surprise" in the title. (Parents, take note)

Ingredients

Cream of Chicken Soup
Mashed Potatoes

Variations: 
Use Cream of Mushroom Soup
Use Rice or Pasta
Instead of Potatoes
and/or
Melt Some Cheese in the Soup





Directions for Chicken Surprise

Use real potatoes...or if you must, use frozen. I do not advocate using boxed. There are just too many additives.


It's not hard to boil some potatoes in water, drain them, and mash. I usually add milk and butter, salt and a tiny bit of pepper. Or use a steamer to make it faster and easier.

Open the soup and make it with less liquid than the recipe calls for...to keep it a little thick, like a gravy. Heat it up.

To serve, put potatoes on plate and pour a generous amount of the soup all over them. Enjoy!
