Quick Chicken Wine Casserole

Quick and Easy Chicken Wine Casserole is a recipe I've had forever.  It was one that my college roommates and I cooked for our boyfriends when we wanted to impress them with our "gourmet cooking skills."

I have served it at many small dinner parties too, and everyone always thinks you spent hours in the kitchen to make it. Surprise, you can get everything in the oven in 15 minutes or less and just wait till it's cooked 2 and a half hours later.

In the meantime, set the table, chill the rest of the Wine, and go get ready. When you are done, so is the Quick Chicken Wine Casserole and the rest of the Wine. How easy can you get?

Oh, did I mention it's awesomely delicious? It is!

Ingredients

4-6 Pieces of Chicken
2 cans Cream of Mushroom Soup
1 can Cream of Celery Soup
1/2 cup Sauterne
(or other White Wine)
2 medium Onions
10 Carrots
Thyme, Salt, Pepper, Basil

Optional: Add 1 can of Peas, or a box of Frozen Peas
Add Canned or Fresh Mushrooms


Directions for Quick Chicken Wine Casserole
~Heat oven to 350 degrees~ 

Use a 2 quart or larger dish 

Place Chicken pieces in a Casserole dish and season with the Spices. 

Pour Soups on top. 

Cut up Onions and Carrots and Peas(optional) and add. 

Pour the Wine over all. 

Bake for 2 and 1/2 hours. Enjoy!

Serve with Rice or any kind of Noodles and a Salad for a quick and tasty Gourmet meal for 2 or 3 people. 


*You can add more Chicken and I often use 8 pieces, but if you use more than 8 pieces, add more Soup. It cooks down to a thick sauce.
