Easy Garbanzo Bean Curry

This is a recipe I adapted from a little gem of a book entitled Diet for a Small Planet which might be the Bible of vegetarians. It is packed with information on how to effectively eat vegetarian and still get all the nutrition you need to thrive as a human. It has quite a few recipes too. I am not vegetarian myself and adapted some of the recipes for my family. This one is a staple in our family and is easy and quick to prepare. I serve it with Rice and Chutney Sauce. 

*Note: You can use canned Garbanzo beans if you don't want to cook your own. Tastes great either way.

Ingredients 

3 cups of cooked Garbanzo Beans 
(you might call them Chickpeas) 
Save the Liquid from cooking, 
or the cans if you use them
2 Onions chopped
Oil (I use Coconut or Olive)
2 Tbs Curry Powder (or less) 
2 Tbs Sesame Seeds

4 Tbs Flour (Whole Wheat Flour 
works best for this recipe)
1/4 cup Oil
1 Chicken Bouillon cube
2 cups Water (including the Liquid 
you saved)
Salt as needed


Directions For Garbanzo Bean Curry

Cook Onions in Oil until  Onions are clear. Add Curry Powder and Sesame Seeds. Mix and add the Garbanzo Beans. Put all into an Oiled casserole dish. 

Heat 1/4 cup of Oil and add the Flour. Cook until browned. Add the Chicken Bouillon cube and the Liquid. Cook until thick and bubbly. I don't add Salt but you can.


Pour over the Garbanzo mixture in the casserole dish. Stir. Cook covered at 350 degrees F for a half hour. Enjoy!
