No Bake Chocolate Nut Cookies

No Bake Chocolate Nut Cookies! You had me at No Bake and Chocolate, let alone add in nuts!

This recipe is perfect for those times when you want something sweet and don't want to heat up your kitchen, or if you want something easy to make that your kids can help with, or you need a quick easy treat to take to a party.

And if the kids help, they can take some to their teachers and truthfully say that they made them a special gift!

I always made these with my kids while listening to Holiday Music. They could feel like they were part of the big cooking extravaganza that was going on and I didn't have to worry about their getting burned while learning....

Ingredients

6 Tbs Unsweetened Cocoa Powder
1 1/2 cups Sugar
1/2 cup Butter
1/2 cup Milk
1/2 cup chopped Cashews or Almonds
1 teaspoon Vanilla
3 cups rolled Oats, uncooked



Directions for No Bake Chocolate Nut Cookies

Clear an area on your counter or a table . Place towels on this and cover with with waxed paper for dropping the Cookie mixture on. Alternatively you can line Cookie sheets with waxed paper.

In a medium heavy bottomed saucepan over medium heat, combine the Cocoa, Sugar, Butter, and Milk. Bring the mixture to a boil and continue to cook for 1 1/2 minutes while stirring constantly.


Make sure the mixture is boiling vigorously (with bubbles all over the surface) before beginning to count the time.


Remove pan from the heat and stir in the Vanilla until creamy and add the Oats and stir until thoroughly combined.

Drop by teaspoonfuls onto the waxed paper. I like to use a small Cookie scoop when making drop Cookies - it speeds up the process and gives the Cookies a uniform appearance.

Let cool until firm, about 1 hour. (or faster if you refrigerate)

To make larger flatter Cookies, drop by tablespoons and then flatten slightly with the back of the spoon or your damp fingers.

Makes about 3 dozen No Bake Chocolate Nut Cookies


Cookie Variations

Stir in 1/2 cup shredded Coconut with the Oats.

Stir in 1/2 cup dried Cranberries or Raisins with the Oats.

Ingredients

1 Graham Cracker Pie Crust
1 Jar Marshmallow Creme
I Box Instant Chocolate Pudding
Plus Milk (2 cups) to Make It
Cool Whip or
Canned Whipped Cream
Shaved Chocolate for the Top
or Use Chocolate Chips
or Chocolate Syrup



Directions for S'mores Pie

Spread the Marshmallow Creme all over the Graham Cracker Crust. 

Prepare the Chocolate Pudding Mix and spread it on top of the Marshmallow Creme. 

Refrigerate, or you can even freeze it if you are in a hurry. 

In the refrigerator, after an hour you can put the Whipped Cream on it. 

In the freezer it only takes about 20 minutes and then you are ready to add the Whipped Cream topping. 

Top with shaved Chocolate, or just use Chocolate Chips, or even easier, just pour some Chocolate syrup on top. 

Or be decadent and add all three! Yum!

It used to be that you had little choice and had to go grocery shopping whether you enjoyed it or not. But these days that's all changed and you can order lots of food online. I take advantage of Amazon Prime and get free shipping all the time. I order all my staples and canned goods and soft drinks and wine online. Then all I have to shop for locally is dairy products and fresh produce. It really makes sense now that the price of gas is so high. Plus it's much easier. It comes to your door. Gotta love that!

I've always made my own yummy Chocolate frosting and sometimes I wonder why people buy fake Chocolate icing which is what I call the stuff you can buy in a can.

True it is quick, but I just don't like the taste of it. Maybe it's all the preservatives they put in it for a long shelf life.

It is very easy and fast to make fresh and yummy Chocolate frosting from scratch, and as a bonus, it's cheaper too. Here's a quick yummy Chocolate frosting recipe (or chocolate icing, if you prefer that term) that works for Cupcakes, layer Cakes, Cookies, and if you use a little less Milk, it is an outrageous Chocolate Fudge recipe.

Ingredients
1/2 cup Butter
1/4 cup Cocoa
6 tablespoons Milk
1 box Powdered Sugar
1 teaspoon Vanilla



Directions for Yummy Chocolate Icing
Chocolate Icing Recipe


Melt the Butter, Cocoa and Milk over a low heat. Remove from heat and add the Sugar and Vanilla. Mix well and spread on the Cake or Cupcakes while still hot.

Or to make this as a Fudge recipe, use only 3 Tbs. of Milk, and spoon it into a buttered glass pan to cool.

Either way, it's totally addicting.

Easy Yummy Vanilla Frosting

You can buy Vanilla frosting in a can, but it just doesn't taste as good as the real thing. It is very simple to make a yummy Vanilla frosting for all your cake needs. 

I like to use a basic Vanilla icing because you can change it in so many ways. And it's delicious right out of the bowl too.

Tint it with food coloring, or decorate the top by adding sprinkles or other decorations. Or just sprinkle some Cinnamon or Nutmeg on top for a dressy topping. Enjoy!

Ingredients
3/4 cup Butter at room temperature
8 cups Confectioners Sugar, sifted
1/2 cup Warm Milk
Pinch of Salt
2 Tbs Vanilla


Directions For Yummy Vanilla Frosting

Mix all ingredients till smooth, and you can vary the Frosting many ways. Here are a few of them.

~Add any color of Food Coloring
~Sprinkle with Flaked Coconut
~Sprinkle with Decorations
~Substitute Lemon Juice instead of Vanilla flavoring

Who doesn't love Cheese Cake? Who doesn't love frosting?  So how about Cheese Cake frosting? Well it's not the whole Cheese Cake, but Cream Cheese frosting is like eating Cheese Cake on top of whatever you put it on, so you get two desserts in one. How could it get any better than that? So Cream Cheese frosting is the perfect way to top all your cupcakes, and who could think of having a Carrot Cake without Cream Cheese frosting? I know I could not.

And, Cheese is more healthy than sugar, right? (justification for more frosting) Plus like any White icing, you can change the color just by adding some food coloring drops to match any theme. So Cream Cheese frosting is the perfect yummy icing for your dessert.

In a pinch, you can use it as a topping on toast for a different breakfast treat too! And I have used it to disguise tablets that I needed to get down the throat of a pet or two.

Ingredients

8 oz. Cream Cheese
5 Tbs. Butter that is really soft
2 Tsp. Vanilla
2 Cups Powdered Sugar, measure first and then sift it


Directions for Yummy Cream Cheese Icing

Using a mixer, blend the Cream Cheese (not necessary to let it soften) with softened (essential) Butter and Vanilla until combined.


Gradually add Powdered Sugar. You may need to add more sifted Powdered Sugar to reach the perfect consistency and sweetness for you.


Try not to eat it all before you frost the Cupcakes or Cake. Doubling the recipe helps.....

Looking for quick elegant desserts? I have a few here, and some resources to find more. There are complicated desserts aplenty in all the cookbooks, but sometimes simple is best.

For some reason we all seem to want a sweet ending to our meals, no matter how stuffed we are from the main course. In fact there are those among us who would rather skip the meal altogether and just eat dessert. (me) This spawned the quote: "Life is uncertain, eat dessert first." I really love that advice!

But after cooking all that food, do you really want to cook dessert? I know the answer. So let's keep it quick and easy! Here are some quick and elegant desserts to end all your meals in style.

Use any flavor of Ice Cream and drizzle any flavor of Syrup over it.

If you want it to sound more exotic, use unusual combinations, like Chocolate Ice Cream with Cherry Sauce, or Strawberry, or Blueberry…

Or use Fruit, fresh or canned instead of Syrup.
In a pinch, as in unexpected company, I have used Jelly.

Any Liqueur is Wonderful over Ice Cream too..I like Kaluha over Vanilla Ice Cream…

and Almond Liqueur over Vanilla or Chocolate, or even Coffee Ice Cream …

and Blueberry Syrup over Orange Sherbet…

Use your imagination; the possibilities are endless!

If you must dress it up, add some Whipped Cream and a Cherry…or alternate layers of Ice Cream and Fruit in a tall serving dish.

Easy Chocolate Mousse

I cup Heavy Cream
I Box Chocolate Pudding Mix
1/4 cup Sugar

Prepare Chocolate Pudding according to directions. Chill 1 hour.

Whip Heavy Cream until soft peaks form. Carefully fold in Sugar.

Fold Chocolate Pudding into Whipped Cream and stir gently to mix together well. Chill at least 1 hour. Serve with more Whipped Cream, and maybe some light cookies… 

Add fruit on top if you wish.

Cool Whip can be substituted, but it is not as good. And not as healthy either. High fat dairy is good for you!

Hot Fruit With Topping
Love Fruit Pie? This is Easier, and Healthier. No Gluten.


Place any flavor of Pie Filling or Canned Fruit that you want in a casserole dish. 

Crush some Rice Flakes, or use some Oatmeal (or both) approximately 1/2 cup total. 

Mix well with 2 Tablespoons of Butter, 1/3 cup of Sugar, and 1 Teaspoon of Cinnamon. You could also use Almond meal or Almond pieces as part of the mixture.

Sprinkle the Cinnamon Mixture over the Fruit and bake at 325 degrees for 15-20 minutes. 

Serve warm with Ice Cream if desired, or Whipped Cream…or in the South, we serve it with Milk. It’s scrumptious no matter which way you serve it!

Mandarin Orange Dessert

 Also Works As a Fruit Salad.  Mix one or more cans of Mandarin Oranges, drained, some Coconut flakes, some Miniature Marshmallows, and enough Sour Cream to coat it all. You don’t need to overdo, as the juices mix with the Sour Cream and make it thinner. Chill. 

Optional: leave out the Coconut, or Marshmallows, or both. Or use any canned Fruit instead of Mandarin Oranges. 

My personal favorite way to make it is with 2 cans of Mandarin Oranges, 1 small can of Pineapple bits, only a few Marshmallows, and a generous amount of Coconut flakes.

Coffee with Liqueur
Irish Coffee is but One Variation
of This Classic Dessert....


Make some good strong but Decaffeinated Coffee. You don’t want your guests up all night jittery when they want to sleep.

Take a glass mug and put a Teaspoon of Sugar in the bottom.

Add a shot glass of Irish Whiskey, or Rum, or Brandy, or Bourbon, whatever the case may be, and fill the mug up most of the way with Coffee. If you don’t have a shot glass, use 2-3 Tablespoons. Stir.

Float some Whipped Cream on top…and sprinke with Cinnamon or Nutmeg.

That’s right, candy. It’s not just for snacking any more! When you think about it, candy is a perfect dessert. You can buy a whole box or little bags, or bars, or however you want to do this. Either break up the bars and just serve in a beautiful bowl, or serve wrapped candies on a candy plate or bowl.

People eat candy all the time anyway, and this way it does double duty. Dessert and guilty pleasure all in one. And it’s easy!

Plus it has an added benefit. People are reluctant to take a whole bunch of candy pieces at once. They only take a few. Less calories to feel guilty about in the first place. So there will be leftovers for you!

Dress up your dessert by serving it in elegant serving dishes. Your dishes need be limited only by your imagination. I have been known to soak Strawberries in a little Sherry, fill champagne glasses with Ice Cream and spoon the Fruit over the Ice Cream. The champagne glasses add ambiance.
