National Cheesecake Day! What a cool thing to celebrate, right? That smooth cheesy goodness in a pan that is the perfect dessert! I love Cheesecake and long ago perfected my own little quick easy Cheesecake recipe by experimenting quite a bit. 

We love it so much I do the same one over and over, but I do have several different easy Cheesecake recipes here so you can decide which one you like best. 

And more good news: all these Cheesecake recipes are for Cheesecakes from scratch making them way more healthy than store bought ones, since there are no preservatives.

Thankfully, Cheesecake is kind of hard to mess up, so you are assured of some goodness no matter what. All you have to decide is what topping and crust you like best. 

Then on National Cheesecake Day, eat Cheesecake all day long! That's what I'm going to do! Enjoy!

Quick Easy Cheesecake Recipe

Why I think this is the best Cheesecake recipe: This quick easy Cheesecake has been a staple in my recipe repertoire for my whole married life. My husband loves it, and it’s easy to make plus it doesn’t take as long as a lot of baked Cheesecake recipes. 

I tell him I made it from scratch and he thinks I’m a genius in the kitchen. Why mess with success?

Serves: 8 Prep Time: 15 Minutes Total Time: 35 Minutes



Ingredients


12 Graham Crackers, crushed
3/4 stick Butter, melted
(or just buy a Graham Cracker crust)
2 large pkgs Cream Cheese, softened
1/2 cup Sugar
2 Eggs
1 Tsp. Vanilla
1 Tbs. Flour
1 Cup Sour Cream
2 Tbs. Sugar
1 Tsp. Vanilla


Cheesecake Instructions

If you are making your own Graham Cracker pie crust, mix the crumbs and the 3/4 stick of Butter and a little bit of Sugar in a bowl, and press the mixtures into a 9 inch pie pan or a spring form pan. Bake for 8 Minutes at 350 degrees, or just till done. Don't over bake. 

While I love the idea of making a Cheesecake from scratch, sometimes I like to buy the ready made Graham Cracker crust pie shell as it saves time. You can also use a crushed Almond crust, or crushed Macadamia nut crust.

Mix the softened Cream Cheese, 1/2 cup Sugar, Eggs, Flour, and 1 Tbs. of Vanilla at high speed till smooth. Pour into cooled pie crust and bake at 350 degrees for 10 minutes. 

While it's baking, mix the Sour Cream, 2 Tbs. Sugar and the Vanilla with a spoon. After the 10 minutes in the oven, take the Cheesecake out and let it cool for 8-10 minutes, then gently top with the Sour Cream mixture and put back into the oven for 10 more minutes. 

Remove and refrigerate for at least 2 hours. Serve cold. You can top it with any number of fruits, or serve it plain, and some people like to add Whipped Cream on top. This is a very creamy Cheesecake! Enjoy!

*For a really low carb and still delicious Cheesecake, use only 1/4 cup of Sugar in the Cream Cheese mixture, and add 1/4 Xylitol too. I have also made it with all Xylitol and a little Stevia added too. It was good, but not as good as leaving in a little Sugar.

Ways to Dress up a Plain Cheesecake Recipe


Instead of plain Graham Crackers, you can get quite creative with the crust. Here are a few that I have tried with great success. Success to me means it all got eaten in one sitting.

Almond Crust: Use 1 and 1/2 cups of crushed Almonds instead of the Graham Crackers. Gluten free too!

Macadamia Nut Crust: Use 1 and 1/2 cups of Macadamia Nuts instead of the Graham Crackers. Also Gluten free!

Chocolate Cookie Crust: Use 1 and 1/2 cups of crushed Chocolate Cookies instead of the Graham Crackers. (Oreos or Chocolate ladyfingers work well)

No Crust: That’s right, no crust at all for a really low carb Cheesecake. Just use Coconut oil to grease the pan before you add the Cream Cheese. Yes, it still tastes great! What I do is sprinkle a few nuts on top. Yum!


Kitchenaid Stand Mixer to Make Cheesecake

This is probably my favorite tool in my kitchen! My son got it for me but that's not the only reason. It will do so many things. Whip Egg whites in a few seconds, knead bread dough (!) and even mix Meatloaf. Mine is almost 10 years old and still looks brand new. Great for making Cheesecake! I highly recommend it!

Lemon Cheesecake is one of the most loved variations on Cheesecake. But it’s very easy to make. Just alter the above recipe by adding 1 Tbs. Lemon juice instead of the Vanilla, in both the Cream Cheese mixture and the Sour Cream mixture. 

Some people like to grate some Lemon zest into the Cream Cheese mixture, but I don’t like Lemon zest except in Lemoncello. So that’s all I do to turn plain Cheesecake into Lemon Cheesecake. Some people like to serve it with a Lemon syrup too.

Chocolate Cheesecake Recipes
Baked Cheesecake Recipe

Chocolate Cheesecake is another favorite variation in Cheesecake recipes. There are several ways to make Chocolate Cheesecake, but the simplest is to just use Chocolate crust which I have listed above and sprinkle Chocolate on top and/or Chocolate syrup. 

That’s what I do when I want Chocolate Cheesecake. But some people like to add Cocoa Powder to the Cream Cheese in the above simple Cheesecake recipe. To do that, use 2 teaspoons of Cocoa Powder and add 2 teaspoons of Sugar to the Cream Cheese mixture. 

Some people like to add some Chocolate chips on top of it all. I’m into Chocolate decadence so I like every version of Chocolate Cheesecake.
