Elegant and Delicious Spinach Casserole

I got this recipe for Spinach Casserole from a friend in college. She brought it to a potluck and it was so good that we were all eating it out of the serving bowl and it was supposed to be a sit down dinner. I vary the ingredients a little from time to time, depending on if I actually have all of them available when I decide to make it.

My family will eat Spinach Casserole any time for any meal and we do have it quite often. We never have any leftovers no matter how much I make. But if I do make a double or triple amount and hide some of it, and no one finds it, I like to use it as a topping on Pizza or cook up some Noodles and mix them together for a little different take.

Also it is great on scrambled Eggs. No matter how I serve it, it gets rave reviews!

Ingredients for Spinach Casserole
2 Large Bags of Frozen Spinach
or 4 small boxes
1 Stick of Butter
I Large Package of Cream Cheese
I Large Can of Artichoke Hearts
I Can of Water Chestnuts
I half Onion
1 Clove Garlic
Salt, Pepper, Nutmeg
Parmesan Cheese

Optional: add chopped Mushrooms


Directions for Spinach Casserole

Thaw Spinach and at the same time, set Butter and Cream Cheese out to soften.

Chop finely: Onion, Garlic, Artichoke Hearts, Water Chestnuts, thawed Spinach.


Place all ingredients except Parmesan Cheese in oven going casserole dish.


Mix well and sprinkle some Parmesan cheese over the top.


Bake at 325 degrees for 20-25 minutes.

Serve and enjoy!


To Make As A Dip:


Use 2 or 3 large packages of Cream Cheese and
be sure to chop all ingredients extra finely.

Have you ever wondered where that phrase, "Once in a Blue Moon" came from? Well, so did I. Turns out it has a history besides the song.

Astronomically speaking, a Blue Moon refers to the phenomenon of a second full moon occurring in a single month. This occurs on a regular schedule, but rarely, thus the phrase "Once in a Blue Moon" means it seldom happens.

This has prompted many companies to use "Blue Moon" in their name, as a symbol of excellence. They want to paint themselves as the best of the best, the type of company or product that comes along only "Once in a Blue Moon." I have included many logos and some information about some Blue Moon companies.

Musically speaking, a Blue Moon refers to a song that is an old stand by and has been covered by many artists. When people ask "Who sang the song, 'Blue Moon' " it would probably help to know how old they are, as it has been a hit song by many and is even used by the City of Manchester England as their football team's theme song.

"Blue Moon" was written by Richard Rodgers and Lorenz Hart in 1934. I have included some of the more famous ones here, and a whole bunch of Blue Moon paraphernalia from merchants who use Blue Moon in their name or logo.

That only happens once in the same 19 year period. They occur in January and March, thanks to the short month, February. The last Double Blue Moon we saw was in 1999. The next will happen in 2018.

Famous Blue Star Sapphire


Famous Blue Star SapphireThe Star of India is a 563.35 carat (112.67 g) Star Sapphire, one of the largest such gems in the world. It is almost flawless and is unusual in that it has Stars on both sides of the stone. The Greyish Blue gem was likely mined in Sri Lanka and is housed in the American Museum of Natural History in New York City.

The milky quality of the stone is caused by the traces of the mineral rutile, which is also responsible for the Star effect, known as asterism. The tiny fibers of the mineral, aligned in a three-fold pattern within the gem, reflect incoming light into the Star pattern.

In 1900, wealthy financier J.P. Morgan donated the Star of India to the American Museum of Natural History on Central Park West in Manhattan. On October 29, 1964, the famous golf-ball-sized stone was stolen, along with several other gems of note, including the Midnight Star, the DeLong Star Ruby, and the Eagle Diamond. The thieves unlocked a bathroom window during museum open hours, climbed in that night, and found that the Sapphire was the only gem in the collection protected by an alarm – and the battery for that was dead. They raked up the stones and fled the same way they came in. The stones were valued at more than $400,000. Within two days, the notorious cat burglar, smuggler, and one-time surfing champion, Jack Murphy (also known as “Murph the Surf”), was arrested along with two accomplices, later receiving a three-year sentence. Some months later, the uninsured Star of India was recovered in a locker in a Miami bus station. While most of the other gems were also found, the Eagle Diamond was never seen again.
