Elegant and Delicious Spinach Casserole

I got this recipe for Spinach Casserole from a friend in college. She brought it to a potluck and it was so good that we were all eating it out of the serving bowl and it was supposed to be a sit down dinner. I vary the ingredients a little from time to time, depending on if I actually have all of them available when I decide to make it.

My family will eat Spinach Casserole any time for any meal and we do have it quite often. We never have any leftovers no matter how much I make. But if I do make a double or triple amount and hide some of it, and no one finds it, I like to use it as a topping on Pizza or cook up some Noodles and mix them together for a little different take.

Also it is great on scrambled Eggs. No matter how I serve it, it gets rave reviews!

Ingredients for Spinach Casserole
2 Large Bags of Frozen Spinach
or 4 small boxes
1 Stick of Butter
I Large Package of Cream Cheese
I Large Can of Artichoke Hearts
I Can of Water Chestnuts
I half Onion
1 Clove Garlic
Salt, Pepper, Nutmeg
Parmesan Cheese

Optional: add chopped Mushrooms


Directions for Spinach Casserole

Thaw Spinach and at the same time, set Butter and Cream Cheese out to soften.

Chop finely: Onion, Garlic, Artichoke Hearts, Water Chestnuts, thawed Spinach.


Place all ingredients except Parmesan Cheese in oven going casserole dish.


Mix well and sprinkle some Parmesan cheese over the top.


Bake at 325 degrees for 20-25 minutes.

Serve and enjoy!


To Make As A Dip:


Use 2 or 3 large packages of Cream Cheese and
be sure to chop all ingredients extra finely.

Microwaves are not good for you. Convection ovens cook much faster than conventional ovens, and are much safer than microwaves.If you do any research, you will conclude that microwave ovens are harmful. Convection ovens cook almost as fast and are not harmful. For me, I will not have a microwave oven in my house. So I got a convection oven and it works out really well!
